Baked Chicken Taquitos

You will love these crunchy chicken taquitos filled with spices and Mexican cheese! Easy for little hands to eat too! This recipe is ideal to make for your viewing of Saludos Amigos and Three Caballeros Double Feature.

Baked Chicken Taquitos

Ingredients

4 cups shredded chicken

4oz cream cheese, softened

1 tsp cumin

½ tsp onion powder

1 tsp garlic powder

½ tsp chili powder

½ tsp pepper

Juice from half a lime

3 Tbsp fresh chopped cilantro

1 ½ cup Mexican-style cheese blend, shredded (divided)

15-20 (taco size) corn tortillas

Oil for coating

Optional Toppings: shredded lettuce, guacamole, sour cream, salsa, etc

Directions

Preheat over to 425. Line a baking sheet with foil and lightly brush with oil. Set aside.

In small bowl whisk together, cream cheese, cumin, onion powder, garlic powder, chili powder, pepper, lime juice, cilantro and ½ cup cheese. Stir in shredded chicken until combined.

Soften Corn Tortillas by wrapping them in a damp paper towel and microwaved until warm and flexible, about 35 seconds. Fill each tortilla with 2-3 tablespoons of chicken mixture. Roll up and place the taquito with the seam side down on the prepared baking sheet. Repeat with remaining ingredients.

Brush each taquito with oil and bake for 15 minutes. Remove from oven and top with remaining cup of cheese. Bake for additional 5 mins, or until cheese has melted.

Serve with your favorite toppings!
