Buried Treasure Cupcakes

I came up with this cute and easy dessert for our Peter Pan Movie Night. I bought a box of cupcake mix, added my favorite icing (recipe below), and topped it with “sand” and a chocolate coin!

 

Buried Treasure Cupcakes

Ingredients

1 box of your favorite cake mix (or you can be fancy and make your own)
Icing (recipe below)
1/4 cup brown sugar
1/2 crushed Nilla Wafers
24 chocolate coins (you could also use Ring Pops or candy necklaces)

Directions

Bake and frost cupcakes as desired

In small bowl, mix brown sugar and crushed Nilla Wafers together. Dip frosted cupcake into “sand” mixture until icing is evenly coated.

Top with chocolate coin! Huzzah! A tasty treat for all the land and sea lovers alike!

My favorite Decorating icing


Ingredients

3/4 cup shortening
1 tsp Vanilla extract
4 cups sifted powdered sugar (approximately 1 lb)
1/2 tsp Almond extract (you can substitute for other flavors)
1/4 cup water
dash of salt

Directions

Cream shortening with stand mixer. Gradually add sifted sugar, salt, and water. Add flavoring and beat at medium speed, until light and fluffy.

Keep icing covered until ready to use. This icing can be stored in refrigerator, but since it’s made with stortening, it can be left at room temperature over night. Rewhip before serving.
