Spaghetti and Meatballs

This is my mother’s famous recipe… I’m hesitant to share photo-30it, but it’s soooooo good! I’m not even going to leave out the secret ingredients, like my mom did with me! Nothing ever tastes as good as mom’s cooking, but I was bound and determined to get this one right, so the last time we visited, I watched her every move! The ONE ingredient I’ve been missing for the last FIVE years was… evaporated milk in the meatballs! When I confronted her about leaving the ingredient out purposefully, she just giggled! So now, mine FINALLY taste like hers! Honestly, I probably forgot to write the ingredient down when I was younger. 🤷🏼‍♀️ Hope you enjoy this recipe as much as we do! And if you hand it down to your children, PLEASE be kind and write down all the ingredients! 🙂

Tomato Sauce

Ingredients


1 cup onion, finely chopped
3 Tbsp olive oil
2 garlic cloves, minced
1 Tbsp flour
2 cans (28 oz each) crushed tomatoes
1 can (6 oz) tomato paste
1 tsp sugar
1 tsp dried leaf basil
1/4 tsp pepper
1 1/2 tsp salt
1 tsp dried leaf oregano
1 1/2 tsp chili powder
1 Tbsp Worcestershire sauce
1/4 cup fresh parsley, finely chopped

Directions

In large Dutch Oven, sauté onion in oil over medium heat, until slightly soft and translucent. Add the finely-minced garlic and cook for one minute. Stir in flour, until incorporated. Add remaining ingredients, stir to combine. Cover and simmer gently for 2 hours. Stir occasionally to prevent sticking.

Meatballs

Ingredients


2 eggs
1 1/2 tsp salt
1 1/2 tsp dried leaf oregano
3/4 cup fine corn flake crumbs
1/4 tsp pepper
1 1/2 lbs ground beef
1/4 cup onion, finely chopped
2/3 cup evaporated milk

Directions

Heat large skillet with 2 Tbsp olive oil. While the skillet is preheating, mix ingredients together in large bowl. Form into 1 inch balls and place in skillet. Brown meatballs on all sides, until cooked throughly. Once all of the meatballs are browned, place cooked meatballs in tomato sauce and continue simmering until ready to serve.


Serve over spaghetti or mix with spaghetti in large serving dish. Top with parsley and parmesan cheese. Hope you enjoy this delicious Italian dish!
