Cowboy Chili

I’m sure Andy and Woody would have loved this Chili on the Triple R Ranch! This easy recipe is one of my husbands favorites. Full of heat and spice, hearty portion of beef and beans, and always paired with homemade cornbread. I prefer to have some crunch and usually pair it with tortilla chips. Either way… it’s one for your recipe box!

Cowboy Chili

  • Servings: 6-8

Ingredients

2 lbs. ground beef
1 yellow onion, chopped
3 garlic cloves, minced
1 can Rotel tomatoes
1 small can tomato sauce
1 can petite diced tomatoes
1 can dark red kidney beans
2 Tbsp cumin
1 Tbsp unsweetened cocoa powder
1/2 cayenne pepper
1 Tbsp chili powder
1 tsp oregano
1/2 tsp cinnamon
1/4 cup fresh cilantro, chopped
salt and pepper to taste
Toppings: tortilla chips, cheese, sour cream, jalapenos, green onions, etc..

Directions

In a large Dutch Oven, brown ground beef and onions. Once meat is browned, add garlic and cook for 30 seconds. Add all remaining ingredients, stir to combine. Bring to boil, then cover. Reduce heat to simmer, simmer for 2 hours.
Serve with favorite chili toppings and enjoy!
