Ever wonder what Cinderella did with the carriage after it went back to being a pumpkin? These are the silly things I think of while watching the movie, ha! The possibilities are endless, but I like the idea of something sweet and perfect for snacking on a Cinderella Movie Night.
I served this recipe with Butter Waffles, but make it your own using Nilla Wafers, Pretzels, Graham Crackers, Gingersnaps, or apple slices.
Cinderella Pumpkin Dip
2 pkgs (8 oz. each) cream cheese, softened
1 cup pumpkin puree
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1 tsp vanilla extract
In a medium bowl, beat the pumpkin and the cream cheese until smooth.
Beat in the brown sugar, vanilla extract, and spices; combine well until smooth.
Cover; refrigerate for 1 hour. Dust with cinnamon and serve with your choice of dippers. Enjoy!
