Pumpkin Spice Caramel Popcorn

 

The Adventures of Ichabod and the Legend of Sleepy Hollow - Pumpkin Spice Cracker Jacks

If you love pumpkin spice as much as I do, you’ll love this Fall alternative to my Cracker Jack Recipe. The smell of cinnamon, cloves and caramel will have your mouth watering even before they are out of the oven! This would be a great popcorn alternative for ‘The Adventures of Ichabod’, ‘Cinderella’, and a ‘Nightmare before Christmas’ Movie Night. What movie will you watch with this delicious recipe?

 

Pumpkin Spice Caramel Popcorn

  • Servings: 4-6 snack servings

Ingredients

1 qt Popped Popcorn (4 cups, I use one bag of microwaveable popcorn)
½ cup brown sugar (packed down lightly)
2 oz dark corn syrup
½ stick of butter
¼ tsp salt
2 tsp pumpkin spice
¼ tsp baking soda
½ tsp vanilla extract

Directions

Preheat oven to 250.
Line a jellyroll sheet with parchment paper. Add popcorn, spreading evenly around the pan and place in preheating oven.

Mix brown sugar, corn syrup, butter and salt in heavy 2 qt. saucepan. Stirring over medium heat, bring the mixture to boil. Boil for 5 mins or until syrup is thick. Remove caramel from heat. Stir in baking soda and vanilla. Mix well.
Remove warm popcorn  from oven and, working quickly, pour syrup over popcorn. Using a spatula to coat.
Note: The coating will look thin and sparse at this point, but we’ll stir it a few more times to give it a more evenly coat.

Bake for 45 minutes, stirring every 15 minutes so that all of the popcorn is coated.

Remove from oven, let cool and ENJOY! Will stay fresh longer when stored in covered container.
