Cold Veggie Pizza

What meal is better for a movie night than pizza?! We changed it up a bit to fit the theme of Inside Out’s broccoli pizza and recreated one of my favorite pizzas growing up. We used to call it our study group pizza, because she made it almost every time they came over. It’s a really quick and easy recipe, you can use veggies that you prefer also. My kids happen to LOVE broccoli and they ate this up, literally.

Cold Veggie Pizza

  • Servings: 4-6

Ingredients

1 tube refrigerated pizza dough 1 cup mayonnaise 1 package (8 ounces) cream cheese, softened 1 packet of Hidden Valley Ranch dressing mix 2-1/2 cups assorted chopped fresh vegetables (broccoli, cauliflower, carrots, onion, celery, mushrooms, etc…) 3/4 cup shredded cheddar cheese

Directions


Unroll the pizza dough and place on a large an ungreased baking pan. Flatten to preferred shape. Bake at 375° for 10 minutes or until golden brown. Cool.
In a small bowl, beat the mayonnaise, cream cheese and ranch dressing mix until smooth; spread over crust. Top with the vegetables of your choice. Sprinkle with cheese; press lightly. Cover and chill for at least 1 hour. Cut into squares and enjoy!
