Inspired by Disney’s new treat at Hollywood Studio’s Neighborhood Bakery, I recreated a summer time treat with a sweet twist! They turned out INCREDIBLE! *pun intended*
We loved the dance of flavors from the tart Key Lime and sweet white chocolate. It’s so refreshing! It would be perfect for a Summer time snack.
It’s pretty easy to make too! Don’t forget one thing, you are incredible and all of your friends will think so too when you show up with these Disney inspired treats!
First, I made the graham cracker crust and let it cool while I made the key lime filling. Then, when it was done baking and chilled, I cut it into eighths, added some popsicle sticks and dipped them into chocolate.
Thanks Susan from Just a Sunshine State of Mind for the photo of the original pie on a stick and for planting the idea in my head.
Frozone's Key Lime Pie on a Stick
Ingredients
1 1/2 cup graham cracker crumbs6 tablespoons butter, melted
1/4 cup sugar
Pinch of salt
Filling:
1 (14-ounce) can sweetened condensed milk
4 eggs
2/3 cup lime juice
1 teaspoon lime zest
1 tsp baking powder
1/4 tsp salt
Blue Colored Chocolate
Directions
For the crust: Preheat oven to 350 degrees.
In a medium-sized bowl, add graham cracker crumbs, butter, sugar and cinnamon. Stir to combine. Scoop graham cracker mixture into lined small jelly roll pan (mine was about 12×9), then pressing down into a flat layer. Bake for 10 minutes. Remove and allow to cool.
For the filling: Once crust is cool to the touch, make the filling. In a large bowl, add condensed milk, egg, lime juice, zest, baking powder, and salt. Mix until fully combined. Pour filling on top of crust.
Bake for 10 to 12 minutes until set. Remove and allow to cool. Freeze the whole pan for 2 hours. Remove liner from pan and cut edges off for clean lines. Then cut bars into eighths. Carefully insert a popsicle stick from one end of the bar to the other. Set aside.
For the chocolate: In a bowl over a double boiler, heat chocolate. Slowly stir until completely melted. Remove from he
at. If the chocolate is too thick, add a splash of EVOO to make it thinner.
Dip pies into chocolate and spoon chocolate over pie for complete coverage. Then place flat on a parchment-lined baking sheet. Freeze until chocolate is set.
Serve frozen. Store leftovers in freezer.
ENJOY!!
I love this! If I had the time, I’d totally give this one a go! Loving your blog 🙂 (I’m @geekilyeverafter!!)

My filling kept falling apart
I followed the recipe to a T, baked the crust, let it cool then baked again with filling in top, let it cool then stuck it in the freezer for 2 hours. The popsicle stick kept falling out and the entire pie would collapse in pieces so I couldn’t dip them, I instead had to put down a layer of icing for a piece to sit on for the back coating, then dump icing on top of it and coat the entire pie, which ended up causing way too thick of icing overall. Very painful to deal with BUT…at least the pie itself tasted great lol 👍🏻

Oh no! I’m so sorry. I’ll check the recipe to make sure the measurements were right. Did you put the stick into the keylime filling part? The graham cracker crust would have definitely too fragile for the sticks to work
