Mickey Pumpkin Waffles

Mickey and Fall flavors are two of my favorite things in the whole wide world! So you know I had to combine the two once I bought my Mickey Waffle Maker from @shopdisney. You’ll find these waffles to be heartier than Disney’s Pumpkin waffles, but I think the pumpkin purée helps boost the spice flavors for a more authentic taste.

Mickey Pumpkin Waffles

Ingredients

Dry Ingredients:

2 cups all purpose flour

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons cinnamon

1 teaspoon ground ginger

1/4 teaspoon allspice

1/4 teaspoon ground nutmeg

Wet Ingredients:
3 eggs

1 1/2 cup milk

1/4 cup maple syrup

3 tablespoons butter melted

1 cup pumpkin purée

Directions

In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt, and spices. In a small mixing bowl, whisk the eggs, milk, maple syrup and melted butter well, then stir in the pumpkin purée.

Add the wet ingredients to the dry ingredients and whisk together until batter is smooth and well combined.

Ladle 1/2 cup of  batter on to the waffle iron, and cook according to machine directions. Keep waffles warm on a cookie sheet in a warm oven if desired. Serve right away.

I used the light setting on the waffle maker. They will be a little soft when you first get them out of the waffle maker, but they harden a bit as they cool. Drizzle with chocolate syrup AND Maple syrup. You will thank me one day!
