Baked Scotch Eggs

I’ve always wanted to try these, but didn’t want to work with a fryer, so I came up with easy baked version of Scotch Eggs. They turned out amazing! I know most people eat them as appetizers, but my daughter now refers to them as “Breakfast meatballs” cause that’s exactly what they taste like. HAHA!

Baked Scotch Eggs

Ingredients


6 hard boiled eggs, peeled

1 lb pork sausage

2 eggs beaten

1/2 cup flour

1 1/2 cup Italian herbed bread crumbs

Directions


Instructions
Preheat oven to 400°F.
Divide sausage into 6 equal pieces, flatten into disks and set aside. Wrap each hard boiled eggs in one pork sausage disk.
In 3 separate shallow bowls add your flour, eggs, and bread crumbs.
Dredge your wrapped eggs first into the flour, then eggs, then bread crumbs.
Place on baking sheet lined with parchment paper to prevent sticking. Bake for 35 mins.
Serve with honey mustard or your favorite dipping sauce.
