I’m missing the World Showcase more than normal right now, so I thought it would be fun to put a few recipes together and bring back some of the flavors and magic of the park. Now, the question is… do you go left towards Mexico or go right towards Canada when you get there? We rope drop to ride Frozen Ever After in Norway, then back track towards Canada. It seems less busy that way. ANYWHO, I’ve always wanted to get the Cheddar Cheese Soup and pretzel roll in Canada, but I can’t make myself eat something that hot in the Florida heat. Thank heavens for the internet and this cold snap in the Midwest! I found this recipe online, tweaked it a bit, and it’s so good! No wonder people rave over this! I was afraid it would be too thick and stringy, but the smoky flavors and textures from the onion and celery really help bring it all together. The Homemade Mickey Pretzels we made were perfect to go along with it too.

Canadian Cheddar Cheese Soup
Ingredients
½ lb bacon, plus more for garnish
1 small red onion, finely chopped
3 celery ribs, finely chopped
1 cup flour
3 cups chicken stock
3 cups milk
1 lb sharp white cheddar cheese, grated
1 tsp chipotle sauce
1 tsp Worcestershire sauce
½ cup pale ale, room temp
chapped chives for garnish
Directions
In a large Dutch oven, cook bacon until crispy. Using tongs, remove bacon and place on paper towels to drain. Add celery and onions to bacon grease; sauté until the onions are soft and translucent, about 5 minutes.
Whisk in flour and stir constantly for about 3 minutes.
Slowly add chicken broth and bring to a boil, whisking constantly.
Reduce the heat, add milk and beer, and simmer for 15 minutes.
Mix in cheese, chipotle sauce, and Worcestershire sauce, remove from heat to avoid burning. Garnish with crumbled bacon and chives. Serve warm. Enjoy!
