Cornbread Mickey Waffles

This is one of my most requested recipes on Instagram. Cornbread Mickey Waffles are not only easy to make, but I believe the crispy to soft ratio is by far the superior way of making cornbread. Once you try this, you won’t ever want to go back to muffins.

I’ve used this recipe for years, even before my Mickey waffle maker, any waffle maker will do.

Cornbread Mickey Waffles

  • Servings: 12-15

Ingredients


1 pkg Honey Cornbread Mix
2/3 cup milk
1/3 cup vegetable oil
1 large egg

Directions


Preheat waffle iron.

Mix all the ingredients until blended. Pour batter into each Mickey shape, about 2/3 cup total for the three Mickeys. Close lid and cook to golden brown on lightest setting.

When the waffle maker beeps, remove waffles and place on cooling rack. Repeat with remaining cornbread batter.

Serve with chili, soup, or just eat them plain.
