English Trifle

This is the perfect compliment to our Rose and Crown inspired meal, Bangers and Mash. This dessert is so light and refreshing! The chilled pudding and fresh fruits make it’s great for those early summer days. Use whatever fruit you like and have fun layers on the sides for all your family to see. Hidden Mickey not required. 😉

English Trifle

  • Servings: 6-8

Ingredients

1 loaf poundcake, cut into 1 inch squares

½ cup good dry Sherry (optional)

1 (3.4 ounce) box instant vanilla pudding

½ tub of cool whip

1 cup whip cream

1 lb strawberries, hauled and diced

1 pint blueberries

Directions

Prepare box of vanilla pudding, cover and chill in refrigerator for 10 mins.

Then, fold cool whip into vanilla pudding. Place back in refrigerator until assembly.

In a glass trifle bow, layer ½ of the poundcake cubes; drizzle ½ the sherry over cake; top with strawberry and blueberries; the ½ of the vanilla pudding mixture. Repeat layer with remaining ingredients and top with fresh whip cream. Cover tightly and chill for at least 4 hours before serving.

Before serving, top the trifle with fresh strawberries and blueberries.

Note: You can switch it up the fruit, this works well with raspberries and blackberries too.
