Apple Spice and Everything Nice! While exploring Epcot’s International Food and Wine Festival last year with some friends, we discovered the Caramel Apple Popcorn! We found it in the Appleseed Orchard booth with the other delicious apple beverages. Needless to say, we were hooked and so sad that we didn’t get more. So if you’re like me and wishing you were visiting the most magical place on earth this fall, but can’t…. this is the perfect recipe to give you all feels of Food and Wine.

Copy Cat Caramel Apple Popcorn
Ingredients
1 ½ cups apple cider½ cup dark brown sugar
2 ounces dark corn syrup
½ tsp ground cinnamon
¼ cup unsalted butter, cut into cubes
½ cup heavy whipping cream
½ tsp vanilla extract
¼ tsp baking soda
4-6 cups freshly popped popcorn (one bag of 1.16oz microwaveable popcorn works perfectly)
Directions
Preheat oven to 250°. Line a large jellyroll sheet with parchment paper. Set aside.
Add the apple cider to a saucepan and bring to a simmer. Simmer until it is reduced to 1 cup.
Stir in brown sugar, ground cinnamon, and corn syrup, then add butter and cream. Stir, bring to a simmer until thickened or 240°, about 15-20 minutes.
Evenly spread popped popcorn on baking sheet and place in oven to keep warm.
Once sauce is thickened, remove caramel from heat. Stir in baking soda and vanilla. Mix well.
Remove warm popcorn and working quickly, pour syrup over popcorn. Using a spatula to toss and coat.
Bake for 45 minutes, stirring every 15 minutes so that all of the popcorn is coated.
Remove from oven, let cool and ENJOY!
