Surprise your family with a fun and fall twist on a classic breakfast favorite. They will love the pieces of apples, spicy cinnamon, and the sweet glaze! I love making this with my Mickey Waffle maker, but this recipe also works great on any waffle maker. Hope you enjoy!

Ingredients

Apple Fritter Mickey Waffles

1 ¼ cup flour

2 tsp baking powder

1 ½ tsp cinnamon

pinch of salt

1 egg

3 Tbsp brown sugar

1 cup milk

¼ cup oil

3/4 cup diced apples, peeled and diced very small

½ tsp vanilla extract

Icing:

1 ½ cup powdered sugar

1-3 Tbsp milk

2 tsp vanilla extract

Directions

Preheat waffle iron.

In a large bowl, combine the flour, baking powder, cinnamon and salt. In a separate bowl whisk together the egg, milk, oil, brown sugar and vanilla. Add liquids to the flour mixture and mix until just combined. Add the chopped apples and mix only until incorporated.

Pour batter into each Mickey shape, about 2/3 cup total for the three Mickeys. Close lid and cook to golden brown on lightest setting.

When the waffle maker beeps, remove waffles and place on cooling rack. Repeat with remaining batter.

To make the glaze, whisk together the powdered sugar, milk and vanilla extract in a small bowl.

Best served warm.
