Moroccan Meatballs

Moroccan meatballs in a delicious tomato sauce makes for a super flavorful dinner! I served them on homemade hummus and naan, but it would also be delicious with herb couscous. Perfect for a Aladdin Movie Night or a trip around the World Showcase!


Moroccan Meatballs

Ingredients


meatballs:

4 ounces panko
1 lb ground lamb
2 eggs
1 tsp chili powder
½ tsp ground cinnamon
½ tsp ground coriander
1 tsp ground sweet paprika
salt and pepper
fresh parsley to garnish

tomato sauce:
1 Tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
2 celery stalks, finely chopped
1/2 tsp chili powder
1 tsp cumin
2 (14 ½ ounce) diced tomatoes
2 Tbsp honey
salt and pepper

Directions

Place all the meatball ingredients in a bowl and using your hands mix to combine roll into smallish meatballs, about 18-24 meatballs.

Heat the olive oil in a large non stick skillet and fry the meatballs until nicely browned on all sides and then set aside.

Using the same skillet, add oil, onions, garlic and spice ingredients for the sauce in the meatball pan (with a dash more olive oil) until softened – about 5 minutes. Add the tomatoes and sugar, season with salt and pepper. Cover and simmer for 5 minutes.

Add meatballs back into the sauce and allow them to finish cooking, about 10 minutes or until cooked through. To test if they are cooked, cut one meatball in halt; there should be no hint of pink.

Spoon onto serving plates spread with hummus and naan. Top with parsley or basil or a mixture of them both. Also great with couscous!
